The Fattoria di Fubbiano extends over the hills of Lucca for 45 hectares between the towns of Tofori and San Gennaro, an area whose winemaking tradition has been attested since the fourteenth century. Twenty hectares are dedicated to the cultivation of vines, with an annual production of about 100,000 bottles of wine, 80% of which are red and 20% white.

The vines are grown in the traditional forms (guyot and spurred cordon), with a very low number of buds and with a plant density of about 5,000 plants per hectare, in order to enhance the quality of the products rather than quantity. No irrigation practices are carried out, although the vineyards suffer a slight summer drought, however the particular care given to cultivation techniques, processing systems, fertilizations and pesticide treatments is aimed, also in this case, to improve the quality of the productions.
The operations of vinification of white wines take place through the use of the pneumatic press which allows a soft pressing of the grape, without affecting the woody parts, and the fermentation at a controlled temperature which allows to obtain a more elegant and fragrant wine. For red wines, traditional winemaking techniques are used with punching down, pumping over, délestage, possible elevations in oak barrels or barriques which can vary according to the type of wine to be obtained, significantly differentiating the final product. The company’s method choices have always favored respect for local traditions in the creation of typical wines with a well-defined personality and in the search for increasingly refined quality, for the purposes of increasingly cultured tasting and food and wine pleasure.

Rosso di Fubbiano

This wine, considered among the most representative of the Lucca area, comes from the selection of Sangiovese, Canaiolo and Ciliegiolo grapes and other varieties that ripen in the farm’s vineyards. Vinified according to traditional uses, it is an all meal wine that improves its bouquet over time. Ruby red in color and with a fine aroma with particular hints reminiscent of violets and wild berries, harmonious, savory, slightly tannic. Serving temperature: 16-18 ºC. Pairings: white and red meats, especially with typical Lucca dishes.

Villa di Fubbiano

Villa di Fubbiano is the product of the oldest vineyard on the estate (planted in 1970) which is closest to the villa. Hence the name of the wine. It is based on a selection of Sangiovese and Syrah grapes. It is a traditional “all-meal” wine with a ruby red colour and elegant bouquet with red berry notes. In the mouth it is fresh and full-bodied, with light tannicity, characteristics that give it an enjoyable taste. It should be served at a temperature between 16-18°C. Pairings: charcuterie, white and red meats.

First Love DOC

The Sangiovese vine variety gives this wine its solid structure and its typical aroma of sour black cherries and wild berries; the Merlot vine variety adds its silky texture, lightly supported by hints of mint and of small red berries, the Cabernet Sauvignon vine varietal finally perfects to the symbiosis of these three great vine varieties with its austerity, its lightly herbaceous bouquet and its elegance. With its modern style and decisive Tuscan character, this wine can simultaneously be defined as complex and simple. First Love represents the combination of skill and experience in the art of wine production on the one side, and the desire of innovation on the other side. Serving temperature: 16-18 ºC. Pairings: red meats, roasts and grills, game and cheeses.

San Gennaro

From the clusters of a vineyard facing south, just below the medieval village of San Gennaro, comes this cru. It is a red wine that includes Sangiovese, Canaiolo and Ciliegiolo grapes. Alcoholic fermentation takes place around 28-30 ºC and contact with the skins lasts for about 12-15 days. At the end of this stage, the wine is transferred to barriques and small oak barrels where it stays for about 12 to 14 months. In the next step, the resulting blend is gently filtered, then bottled and left to age for six months. It is a wine with a deep ruby red color and a robust, round body. Its aroma, intense and persistent, is reminiscent of red berry fruits. Serving temperature: 16-18 ºC. Appropriate decanting is recommended. Pairings: braised meats, roasts, game, aged cheeses.

I Pampini

Qualified among the most prestigious wines of Tuscany, this wine shows the great potential of the Sangiovese vine variety. Here the prevailing Sangiovese grape, is combined with the Teroldego (a grape variety indigenous to Northern Italy). The Teroldego grapes come from a small vineyard, still a part of the winery, which is more than 40 years old. Its colour is an intense ruby red, the bouquet offers a wonderful olfactory range starting with initial emanations of red berries and developing towards spicy aromas, whereby the richness of vanilla, tobacco and light balsamic notes gradually appear and prevail with a remarkable persistence. The taste reveals a great structure, supported by a good acidity and mature, well-balanced tannins. The finish is generous and persistent, providing ethereal aromas and a reminiscence of liquorice. Our I Pampini is produced only in the best years and is matured in french oak barrels, enhancinge the bouquet and enriching its gustative and olfactory complexity. Serving temperature: 16-18 ºC. Appropriate decanting is recommended. Pairings: fine meats, important roasts of game, game and strong and tasty aged cheeses.

Maxim

Wine produced only in exceptional years, selecting the best grapes produced during the season, which change from time to time. It is refined in barriques, or small oak casks, for about 36 months. The colour is an intense red, between ruby and garnet. The nose is broad, with an explosion of scents of ripe red fruits, wrapped in spicy notes of vanilla and sweet tobacco, with a finish of aromatic herbs. In the mouth it is full-bodied, warm, harmonious and persistent with elegant tannins. To be served at a temperature between 16-18 ° C. Pairings: aged cheeses, braised cheeses, red meats, game.

Bianco di Fubbiano

This dry white wine is made from selected Vermentino and Viognier grapes that ripen in the farm’s vineyards. The temperature-controlled vinification results in a harmonious, elegant and pleasantly fresh wine, in which the typical characteristics of the area can be recognized. Serving temperature: 10-12 ºC. Pairings: appetizers, light first courses, fish and fresh cheeses. Can also be served as an aperitif.

Vermentino

A wine with a distinct personality, it has a very luminous golden yellow colour with green tonalities. The bouquet contains varied hues of the rich and elegant aromas of acacia blossoms and broom, reminiscent of minerals, citrus and tropical fruit. The taste reveals a remarkable suppleness, which is well-balanced with an appropriate freshness and a very pronounced sapidity; it has an intense and lingering aroma. It is also interesting to monitor this Vermentino’s evolution through the passage of time. Serving temperature: 10-12 ºC. Pairings: as an aperitif and with fish dishes.

Elisir pour viver

Viognier and Vermentino at 50% are vinified in steel, raised in barrels for 6/8 months and then aged in the bottle. The wine is bright straw yellow in the glass, with golden reflections and a good texture. Warm, buttery notes are immediately evident on the nose, leading the way to fragrances of ripe fruit and dried apricots, exotic fruit and apples, followed by a plant note of wildflowers, and finally reaching dried fruit and a delicate minerality: a wine with a wide aromatic range. Good freshness and persistence can be perceived in the taste with a slight alcohol note and the enveloping elegance of wood. A complex, meditative wine, which must not be served at a temperature of under 12°C, in order to maintain its ample bouquet. Pairings: Foie gras, black truffle, marbled cheeses, game.

Schiller

The latest wine from the Fattoria di Fubbiano is called “Schiller” and is a rosé that is produced by means of the saignée method from Sangiovese grapes. These grapes come from a vineyard which was planted in 2003, shortly after Alfred Schiller bought the winery. The scorching heat of that summer did not prevent the cuttings from developing slowly but steadily, and Alfred himself was struck by the tenacity and strength of those vines, which today offer the grapes for the farm’s finest wines. The wine was given the name “Schiller” because it is both the name of the Fubbiano owner as well as a term used in the German winemaking tradition to describe a rosé produced from a mix of red and white grapes – in German, the term “schillern” means “to shimmer”. We liked this coincidence so much that it was the obvious choice to call our rosé “Schiller”. The rosé has a bright and clear cherry colour and an intense, rich bouquet with aromas of blackberries, cherries and raspberries, accented by hints of yeast and fresh bread. Its flavour is clean and savoury, with a delicate freshness emerging and building to a long wonderful finish with fruity components. The mouth entry is sharp, clean and tasty. Soft and enveloping, it shows remarkable freshness and savoriness. The taste finish is long and persistent with fruity notes in the aftertaste. Pairing: excellent aperitif, it happily accompanies dishes based on shellfish and seafood. We also recommend pairing it with pizza.

Aleatico

This wine is named after the ancient grape variety that is used to produce it. Thoughts are divided about the origin of the Aleatico grape and its name, but whatever its history, Greek or Italian, it is here in Tuscany that we employ an ancient pre-Roman method of viniculture to produce this wine. At Fubbiano, we leave the grapes on the vine until they are fully ripened. The grapes are inspected daily and any impurities and all inferior berries removed. Two or three days after creating the must, fermentation begins and slowly but steadily continues until the fermentation process stops naturally due to the high sugar content. The end result is a beautiful dessert wine, a deep ruby nectar with primary aromas of flowers and fruit. The flavour is soft and sweet – an initial sweet sensation is followed by the lingering taste of sour cherries, marmalade and fresh fruit. The wine serves as an ideal accompaniment to desserts such as fruit tarts and flans, cream and soft fruits as well as strongly flavoured cheeses.

Grappa

The opportunity to have at our disposal fragrant and fragrant Aleatico pomace, combined with the expert work of Priscilla Occhipinti of the prestigious Nannoni distillery, with an artisanal copper distillation plant, allowed us to obtain a small batch of grappa with unusual characteristics. The strength and character of the distillate are diluted in a range of aromas typical of Aleatico, which can be recognized in the glass with hints of raisins and plums. The intense aromas are matched by a robust body. Soft and delicate, our Aleatico Grappa surprises with its natural sweetness, never excessive, remarkably persistent. Service temperature: 8-18 ºC. It can be served at any hour, but it becomes the ideal crowning glory after lunch.

Vinegar

Our Red Wine Vinegar is produced using the “traditional slow-fermentation system” which requires the continuous pumping of the wine in specially adapted vats with grape stalks or lengths of vine prunings. In this way, the alcohol in the wine is slowly converted into acetic acid; this conversion takes place in a completely natural way, without any type of force. At this point the vinegar obtained is matured in oak barrels, with this process further improving the taste and smell of the product. Once matured, the vinegar is then filtered (not microfiltered) and prepared for bottling. In time, some sediment may develop in the bottle, but it does not affect the quality of the product and is closely linked to the type of processing. Its particular acidity makes it ideal for everyday cooking uses, especially for dipping and salads.

Olive Oil

Extra virgin olive oil constitutes one of the most prestigious products of the Fattoria di Fubbiano. For its undoubted superior qualities, which make it one of the best oils in Tuscany and Italy, it has received several national and international awards and recognitions.
The cultivars from which our oil is obtained are made for 90% Frantoio and for the remainder 10% Leccino, Moraiolo, Maurino and Pendolino. The farm’s Haflinger horses graze wild in the olive groves performing repeated weeding and all-natural soil fertilization. Harvesting is conducted exclusively by hand, and oil extraction is achieved only through mechanical and physical processes, without the use of chemicals. Other than washing, the olives undergo no further treatment.
The oil has the typical characteristics of the Lucca hills: the color is golden yellow with light green tones, the flavor is medium fruity, slightly spicy with an intense sweet sensation.
The polyphenol and tocopherol content, due to the prevalence of the Frantoio cultivar, is significant. The average acidity is between 0.1 and 0.2.
One of the best ways to enjoy Fubbiano extra virgin olive oil is the classic “Bruschetta”, or combine it with salads, soups, soups, boiled fish and grilled meat. In addition, the daily use of extra virgin olive oil in cooking not only enriches the flavor of dishes, but also brings well-established benefits to the health of diners.
